Solar Production of a 7.65kW System

Hi;
I have installed 18 panels of 425kW each which totaled 7.65kW with one central inverter. How much of this capacity should I see the system producing in the peak hours (11am to 1pm)? How much % of this capacity should I see in peak hours? (85%-90%?) What should be the daily average production or annual production? Assuming that there is no interruptions (e.g shadows, etc.). Also, how much production a string of about 6 panels losses if one of them is not producing well because some shadow?
